Recently, I discovered the joy of making cupcakes in the microwave. They’re never quite the same, but it’s a whole lot better for me to only be able to make one cupcake at a time to eat versus a patch of 10 or so (and that’s with my cutting the mix in thirds). Here is how my little cupcake in a mug turned out. I added some powdered sugar and milk icing to the top with pink and yellow spring colored sprinkles for fun.
Without further ado, here is the basic recipe for the cupcakes. The mix is made from one part yellow/ vanilla cake mix and one part angel food cake mix. Simply add 3 tablespoons of the mix, 2 tablespoons of water, mix it all up in a mug, and microwave for 1 minute! Viola, a cupcake!
I’ve noticed that depending on the size of mug you use, you might need to adjust the time slightly. For thinner mugs, I would suggest a little less time. Make sure your mug is at least twice as big as the amount of batter in it, otherwise it will likely overflow! (I did this last night knowing better, oops!)
